Glazed Roasted Chicken with Roasted Yams
Baking time - 1 hour 30 minutes; Oven temperature - 350 degrees.
Ingredients:
4 whole chicken legs
1/3 cup red dekkade pastonade
1/2 teaspoon salt
2 medium yams
1 tsp olive oil
1 pinch black pepper
Glaze:
1/2 teaspoon mustard
2 teaspoon ketchup
1 teaspoon barbecue sauce
1 teaspoon honey
1/2 teaspoon white wine vinegar
Dash of garlic powder
Dash of Black pepper
Cooking:
Wash chicken breast in cold water.
Towel dry then place in a large bowl
Add red pastonade and salt in the bowl with the chicken.
Mix the marinade and salt into the chicken.
(use gloves and massage the marinade into the chicken).
Cover the bowl or place in a ziploc bag.
Place in the refrigerator for 3-6 hours or overnight.
Heat oven to 400 degrees
When ready for roasting, peel, cut and dice the 2 medium yams.
Place the diced yams in a bowl and add the olive oil, salt and pepper.
Mix them together.
Place the chicken on a baking rack.
Add the seasoned and diced yams on the rack next to the chicken.
Heat the oven to 400 degrees fahrenheit.
Add the chicken and yams in the oven.
Bake the yams for 45 minutes. Taste for softness then remove.
Keep the chicken in the oven for an additional 30 minute.
Mix the glaze ingredients in a bowl.
After the chicken bakes for the additional 30 minutes,
Remove the chicken from the oven and add the glaze to them.
Return the chicken to the oven for 5-10 minutes or until golden and shiny brown.
